There is lots of creme fraiche and apple on the palate, too, which turns more buttery towards the finish. Winery:  "Our 2007 Napa Valley Chardonnay reveals elegant aromas of creamy vanilla, honeysuckle and ripe fruit of white peach and pear. This wine is full bodied and rich with refined acidity that is maintained through the intense fruit and vanilla focused finish.  The grapes were gently pressed as whole clusters and after the juice settled overnight, it was racked, inoculated with yeast to initiate primary fermentation. Afterward, the wine underwent malolactic fermentation and was aged in French and American oak barrels on lees. The final blend was crafted after each lot was evaluated individually."

Wired For Wine:  The William Hill Napa Valley Chardonnay is the classic example of a good, buttery California Chardonnay.  The phenomenal balance of fruit, acidity and a hit of minerality make it perfect next to buttery and creamy sauces.  Crab, lobster, sautéed scallops and most seafood will pair beautifully with this wine.  We suggest glazed salmon with ginger butter sauce or fettucine with crab in a fresh tomato cream sauce.  Our favorite with this Estate Chardonnay: crab rolls with lemon aioli. Veal is terrific with this rich wine too.  How about a fresh, new take in a veal stew with spring greens?  To start, because the William Hill is also great with chicken, we would do chicken sate with peanut dipping sauce.  Or, if you're feeling a little decadent, fried oysters would be delicious too.  To finish, we choose a nice earthy brie.  But if you're in the mood for something in the dessert realm, a not-too-sweet coconut crème brûlée is our pick.  Loosen those belts winelovers; there are many choices here!
