Wired For Wine:  Boy are we ready for some warm temperatures and a deliciously silky white to quaff while we sit outside (finally)!  Enter the Yalumba Organic Viogner from our mates down under...  Crafted from a vineyard which has been certified organic for over 10 years, the purest notes of this fruit shine through in an extraordinary final product.  The generous mouthfeel and gorgeous floral notes of your first glass of this Viognier will dazzle you as you enjoy it with lobster crisps drizzled with a creamy champage sauce.  As for the entree, the lovely and varied notes of fruit, from apricot to pear and lychee, along with the subtle hints of almond and spice, and its substantial body all combine to make this Yalumba a first rate choice fro fish, lobster, roast pork, chicken and much more.  We absolutely love it with Shenga Chat (Shrimp Curry Madras Style).  It's cooked with curry, garlic, garam masala and coconut milk, and to die for with the broad spectrum of this white's fruit.  Aromatic braised chicken with fried onions, after being cooked in ginger, cinnamon, cloves and a pinch of cayenne is another great option.  Quick and easy, but no less appetizing is a big bowl of spaghetti with cauliflower, green olives, toasted almonds and a generous sprinkling of parmesan.  When the dishes have been cleared, 0pen another luscious bottle and serve it with a nutty Petit Basque cheese.  Bottoms up winelovers!
