Konteki is a brewery located in the Fushimi district of Kyoto, a famous center for sake production. While many daiginjo are opulent and aromatically intense, this sake is intentionally quieter so that it can be enjoyed throughout a full meal without clashing with any flavor components.
The aromas of anise, banana, and a hint of sweet rice are quite complex. These same flavors come rushing through the full-bodied palate followed by such a pleasantly long and clean finish that you’ll hurry back for more!
Food pairing: textural pairings to highlight the velvety texture of this sake have been the most memorable for me; cream sauces, brown butter potato puree, sautéed oysters."
