Oddero is one of the great, historic, traditional Barolo houses with a long history spanning over 200 years. There are mentions of the Oddero family in La Morra as far back as the 1700s, though the family was likely there even before that point. The Oddero estate is one of the first to bottle Barolo. Not only that; their Barolo vineyards are now certified organic.

The Oddero Villero Barolo should be admired on a shelf for a few more years, and when you can't wait any longer, decant it for at least an hour while you prepare a grilled pizza with black, oil-cured olives, plum tomato, thick mozzarella slices, all brushed with EVOO and sprinkled with flaky sea salt. The pairing is other-worldly. Duck confit raviolis in an oxtail broth is another memorable pairing. Not craving meat? Not a problem; a risotto made with ceps mushrooms is perfect for this Piedmontese red, as are sauteed sweetbreads with grilled, shaved fennel and caramelized cippoline onions. We're not done yet! Fill your glasses once (or twice) more and enjoy them with an Italian Boschetto al tartufo cheese. You'll be glad you did.
