Hearty meat dishes will pair best with this Raymond Generations Napa Valley Cabernet Sauvignon. Beef, lamb, steak and game are just the ticket. The pairing options are endless given the myriad of flavors in this remarkable Raymond. Rich, ripe fruit, baking spices, beautifully integrated tannins and more. If you decide against stowing it in your cellar, we suggest grilling a rack of lamb which has been drizzled with olive oil and sea salt. Next to that, some rice tossed with lentils and torn fresh mint leaves, and eggplant your favorite way. It will awaken the gentle spices in this Napa Cab. Or, we love a thick New York strip too. Mix some coarsely cracked black pepper with sea salt and press it onto both sides of the steak and grill to perfection. When you make the creamy mashed potatoes to go with it, heat the milk or cream with a sprig or two of fresh rosemary in the pan; it will result in the most wonderfully subtle flavoring. Hang on; we're not done yet. Make sure you get enough of this Generations so that there will be at least one glass to go with the dark chocolate mousse for dessert. For optimal enjoyment, top it with a brandied cherry or two. Who's ready to eat, winelovers??
Jeb Dunnuck: "One of the true superstars in the portfolio is the 2016 Cabernet Sauvignon District Collection Generations, which is even better than the 2015. Brought up in just over half new barrels, it has an incredible bouquet of crème de cassis and blackberry fruits intermixed with lots of spice, fruitcake, and earthy minerality. Possessing full-bodied richness, a sensational sense of opulence with no weight, ripe tannins, and a great, great finish, hats off to winemaker Stephanie Putnam for another brilliant Cabernet Sauvignon that can be drunk today with incredible pleasure or cellared for 20-25 years. Drink 2019-2039." Jan 2019
Robert Parker, Jr.'s Wine Advocate: "The deep garnet-purple colored 2016 Cabernet Sauvignon Generations (aged for 20 months in 54% new French oak) is scented of licorice, crème de cassis and mocha with underlying hints of smoked meats, tapenade, dried lavender and cardamom. Big, rich and concentrated and with firm, fine-grained tannins, it has lovely harmony and length, with minerals coming through on the finish. 1,123 cases produced." Oct 2018
Winery: "Deep garnet purple in color, this 2016 Cabernet Sauvignon has licorice, crème de cassis and mocha aromas with an underlying hint of smoked meat and cardamom. This is a big and rich wine with fine-grained tannins and concentrated flavors of berry preserves with spicy layers and a velvety texture. The finish is long and harmonious with lingering mineral notes."
The 2016 Vintage: "The 2016 vintage across California was a near-perfect growing season. A mild winter and spring led to a steady mild July and August, followed by warm days at the end of the season for the perfect ripeness. With warm days and cool nights in the summer, grape growers were able to maintain ideal acid levels with balanced, concentrated fruit flavors."
