The good news? The Castellare di Castellina Poggio Ai Merli is ready to drink now. Not something we see every day, it's a Tuscan Merlot, and one you're going to want to try, pronto. It's got body and soul to spare, and will light up the food pairings you prepare. Pour your first glasses of this Tuscan treat and sip them with a delicious platter of salumi. Make sure there's a fennel salami or sausage in the mix, and an aged Pecorino. Close your eyes and you might just be transported to the divine patchwork quilt which is the vista of Tuscany's hillsides - vineyards, olive orchards, wheat and more. Depending on your hunger level, you can do lamb sliders topped with melted blue cheese, or full blown lamb and blue cheese burgers. A little rosemary in the lamb will bring out the herbal notes in the wine beautifully. If you're buying this Ai Merli to cellar, keep in mind your holiday meals which involve turkey... If you're entertaining, we say pan-seared veal chops with portabellos and a portabello gravy. If it's a quiet night and you're craving comfort, make it spaghetti with Nona's meatballs. This pure expression of Merlot is generous and round with luscious layers that come forward one soft wave at a time. Perfectly ripened cherry, blackberry, spice, toasted almond and grilled Mediterranean herb form a seamless composition. This is one of the best editions of Poggio Ai Merli that I have tasted. The intensity is stunning and the velvety nature of the mouthfeel is impeccable. It is textured, structured and beautiful. This is a bottle for the cellar. Drink 2016-2028.

I was lucky to visit Castellare di Castellina on what may be the best day of the year to come to this estate at the heart of the Chianti Classico appellation. The afternoon I came, Trebbiano grapes had just been harvested to make Vin Santo del Chianti Classico. Each cluster was harvested with its wooden stem still intact. This way, the clusters are attached to metal hooks for the long drying process that will concentrate the sugars and aromatic intensity. A group of young workers labored furiously to hang all the grapes in what looked like massive curtains of grapes from wooden rafters. It was a beautiful site. Winemaker Alessandro Cellai presented his new vintages and added a few older wines to my flights. It is my pleasure to produce those notes here." Oct 2015
