Protocolo Organic Tinto 2018
Jeb Dunnuck calls this Dominio de Eguren Protocolo Organic Tinto a "smoking value" and we think he's hit the nail on the head. This one's a buy-by-the-case-buy, winelovers. It's a great aperitif as you're getting ready to eat, or you can have your first glass with your favorite antipasti. We like it with soppresata salami, prosciutto wrapped around homemade grissini (thin bread sticks) and chunks of Manchego cheese. One of our all-time favorite sandwiches for any time of the day is smoked brisket with homemade pickles and hearty baked beans on the side. Douse with your favorite sauce and you won't believe your taste buds. This organic Protocol is the perfect accompaniment. Sweet and tangy spare ribs finished on the grill for the perfect caramelized char are another must with this delicious Tinto. And, because it's got a medium-to-full body, it's terrific with a thick summer tomato sauce over spaghetti sprinkled with freshly grated parmesan. The secret to how good the sauce is?
