Fish, seafood, chicken, salads, fresh herbs, appetizers warm and cold alike and more will pair beautifully with this Domaines Ott Chateau de Selle Cotes de Provence Rose. Serve a generous pour and offer up some prawns tossed in anchovy butter. A classic French Pissaladiere, salt cod baked with potatoes, onions and garlic, and toasted baguette slices is another tasty option which will disappear quickly. For the entree, crab-heavy crab cakes with a celery root remoulade is just the ticket. Make sure there is an absolute minimum of bread crumbs, like our favorites from Faidleys in Maryland... Grilled sea bass topped with caramelized fennel will be nice opposite the floral and mineral notes of the wine. If you're not in the mood for fish or meat, make it a big, steaming bowl of pasta and homemade pesto. Don't forget to have lots of freshly grated parmesan on hand. How about another glass or two with a peach cobbler? We think that should be a resounding oui!

Winery:  "Pale pink hue with subtle golden tints. The fine, delicate nose is both fresh and vinous. It develops aromas of citrus fruit, vineyard peaches and white flowers. The palate is elegant, dense and silky. This wine exudes delicious aromas of grapefruit and red berries combined with excellent tension and refreshing notes of liquorice that linger on the finish."

About Domaine Ott: "Domaines OTT was founded in 1912 by Alsatian engineer Marcel Ott. Today, the wineries are owned and managed by Champagne Louis Roederer, producing some of the world's most prestigious wines. These wines are made at three distinctively different estates:  Chateau Romassan (Bandol), Clos Mireille and Chateau de Selle (both Cotes de Provence).  Chateau de Selle is located in the Cotes de Provence appellation, located inland on limestone hillsides, enjoying abundant sunshine. The proportion of stone in the soil is 40 to 50 percent, making it an arid soil and, despite the presence of some extremely fertile clay deposits, yields are low. 

Chateau de Selle has an area of 140 hectares, of which 64 hectares are planted. Year after year, the cultivated area of the estate wins over part of the rocky terrain. The earth is mechanically tilled while retaining a natural balance, the original proportion of stone being maintained after crushing. The crushing process is carried out on a yearly basis."
