There’s no denying that Pierre Gimonnet is one of the titans of Champagne’s Côte des Blancs region where he is a top grower; the Gimonnet family has been growing grapes since 1750.  This region, as Lettie Teague of the New York Times puts it, is “particularly famous for its Chardonnay and six grand cru villages: Avize, Chouilly, Cramant, Le Mesnil-sur-Oger, Oger and Oiry.” Here the grand cru “designation denotes not only the highest-quality grapes—but also, generally, those that command the highest prices."

This super small, micro-terroir vintage Champagne is a special bottling, produced only from Chouilly Grand Cru grapes. Gimonnet compared this terroir to fine lace - “delicate and precise” – delivering good acidity and minerality. For these characteristics, sommeliers love this Champagne for how well it accompanies food.
