The Coursodon Saint Joseph Le Paradis Saint-Pierre Blanc is mostly Marsanne, a famously food friendly varietal grown beautifully on this estate in the northern Rhone. Waste no time in opening your first bottle, and tuck into a big ramekin of brandade, a delicious puree of salt cod, potatoes, garlic and olive oil. You'll need some crusty bread as a vehicle. For a light meal, or a starter, make it crab salad with ginger and orange peel. Richer, buttery or creamy dishes work wonderfully with this wine and its stony minerality. Scallops in a brown butter sauce over pureed root vegetables is ideal, as is a risotto with shrimp and peas. If you're not feeling the seafood, make a big bowl of spaghetti with chicken, lemon zest, picholine olives and a reduced chicken stock sauce. Open another bottle and serve it with a French Munster cheese and everyone goes home happy.

He’s another progressive winemaker who has one foot in the past and one foot in the future, and the wines shows impeccable purity of fruit while remaining classic St Joseph.
