    Winery: "Dom Pérignon Vintage 2009 is a wine that needs to be shaken, framed, and challenged by contrasts. This Champagne evokes both vegetable and mineral nuances, calling for a carbonara of sea urchins and cardamom mousse. The wine reveals itself in all its splendor when confronted with the worthy opponent, like octopus marinated in Sicilian orange juice and roasted in butter.
     The nose: Guava and zest of young, spicy grapefruit mingle with white peach and nectarine. The wine breathes, and is completed by a woody vanilla and a gently toasted hot brioche. The mouth: The fruit is majestic, ripe, fleshy and profound. Beyond the wealth of flavour and voluptuousness, it is the impression of coherence that dominates. The power is remarkably restrained. All the sensations converge and persist, silky, and saline, bitter and iodized. Serve between 50 and 54 degrees Farenheit."
