    We're in a Cabernet state of mind, winelovers. It just so happens that our friends in Paso Robles have available this Austin Hope Cabernet Sauvignon to satisfy every nuance of our hankering. Rustle up some glasses, and maybe a nice fire, and pour a generous glass of this delicious red. The layers of dark, ripe fruit will pull you into their warm, happy embrace immediately. If you must move from that chair, hands down our number one recommendation with this big, beautiful Cab is a thick ribeye, grilled, au poivre. Put some caramelized shallots on the plate next to it if you want the pairing to go stratospheric... Pot roast pork shoulder with prunes is another tasty option; be sure to brown it well before putting it in the oven. Not to worry if you're not feeling the meaty dishes; this Austin Hope works wonderfully with a classic eggplant parmesan. The slight bitter found in eggplant is a seamless partner for the tannins in the wine. Hungry yet? Not to worry; there's plenty of Hope to go around.
