    Beautifully decadent, with bold, dark fruit, lovely, firm tannins and an endless, lingering finish, the Lancaster Estate Alexander Valley Cabernet Sauvignon is not to be missed. Decant it an hour before drinking, and then marvel over your first glasses with a heaping platter of smoked chicken wings. It's an intoxicating combination. Pappardelle tossed with a lamb ragu will match the largesse of the wine, and beckon to its earthy nuances. The chill in the air is inspiring cravings for game dishes; we suggest rabbit with brussel sprouts and pancetta, drizzled with a carrot vinaigrette. Or, you may anticipate the reward of this Lancaster Cab all day as you prepare beef braised with porcini mushrooms and cippoline onions. Oh, the aromas... Can't you almost smell them?

It is a blend of all five of the red Bordeaux varietals we have planted on our volcanic hillside slopes. Bold aromas of dark raspberry, cherry, and violet are complemented by a refined minerality. It is well-structured and focused with silky tannins that frame the blackberry, currant, vanilla, and spicy dark chocolate flavors. Endless layers continue to evolve on the palate as the wine opens leading to an elegant, lingering finish. An approachable wine in its youth, this Cabernet will only gain in complexity and will drink well for the next 15-20 years."
