    From highly sought-after Peter Michael winery and French winemaker Nick Morlet, the Peter Michael 'Les Pavots'. Cabernet Blend It's big, bold, earthy and delicious, with lots of dark fruit and developed tannins. It is ready-ish to drink now or you can stash it away for 10 years or more.     Robert Parker, Jr.'s Wine Advocate: "A blend of 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot and 7% Petit Verdot, the very deep purple-black colored 2016 Les Pavots Proprietary Red Wine sings of crushed blackcurrants, blueberry preserves and blackberry pie with hints of camphor, black soil, truffles, crushed rocks and red roses plus a touch of garrigue. Full, rich and with wonderful finesse in the mouth, it has very finely grained tannins and plenty of vivacity, finishing long and earthy. 3,700 cases produced, to be released in the spring of 2019.     "Every one of our wines, regardless of varietal, is stamped with the image of a California poppy as an affectionate tribute to the orange flowers that covered the hillsides when Sir Peter first stood on this land. Many vineyards have roses planted at the end of the vineyard rows. We have wild poppies throughout. Les Pavots is our flagship blend, and the wine Sir Peter had in his mind’s eye when he started his search for a vineyard site in 1976. It is made from grapes grown in the vineyard of the same name on our home estate.

    While the blend varies from vintage to vintage, it is typically two-thirds Cabernet Sauvignon, with the remainder roughly equal parts Cabernet Franc and Merlot, and a final soupçon of Petit Verdot. We enjoy this refined Cabernet blend with its signature blueberry notes, hint of herbs de Provence and its wonderful expression of the full spectrum of red Bordeaux varietals."
