The solid nature of this Silver Oak Alexander Valley Cabernet warrants meaty fare such as lamb, beef and game. Rabbit cooked with peas, pancetta and carrots will pair beautifully with this garnet Cab. Crisp-roasted duck with broccoli rabe, roasted potatoes and skinny French haricots will show off this Silver Oak's lovely earthiness. Slightly more conventional, we love the lasting tannins of this Alexander Valley nectar with grilled beef sirloin and arugala salad dressed with a mushroom vinaigrette. You won't want this meal to come to a close, so we say bring out the dark chocolate, hazelnut cake and make sure everyone gets a scoop of dense hazelnut gelato on their portion.     Winery: "Our 2013 Alexander Valley Cabernet Sauvignon is garnet in color with a ruby red rim, it has an alluring nose of blackberry bramble, baking spices and black olive. Aromas of vanilla, cassis and sage fill the glass, revealing the influence of American oak barrel aging. On the palate, notes of raspberry are complemented with lingering acidity and a finish of dusty, silky tannins. Given proper cellaring, this wine will provide drinking pleasure through 2036."
