If you're interested in a powerhouse Cabernet from a big name Napa Valley winery which still has 20 years of evolving in it, then this is the wine for you. Get out your favorite decanter and let the wine sit while you prepare Asiago-stuffed dates with bacon and smoked paprika. They will bring out the lovely, gentle notes of smoke in the wine. For the entree, think hearty and meaty. If you're thinking classic Cab-and-a-slab, then make it a beautifully simple steak au poivre. Grill it so that bit of char allows the smooth tannins to shine. Braised lamb shanks with leeks, eggplant, red wine and ancho chile will be perfect with the dense, full body of this Private Reserve. Jeb Dunnuck: "I was able to taste to two vintages of the Private Reserve, and the 2015 Cabernet Sauvignon Private Reserve comes from a vintage loved by the estate. The final blend is the normal 97% Cabernet Sauvignon, 2% Cabernet Franc, and the rest Petit Verdot brought up in 85% new French oak. This full-bodied, ripe, voluptuous beauty shows the vintage to a T, offering a blast of sweet blackcurrants, licorice, ground herbs, and graphite aromas and flavors.
