This Beringer Knights Valley Cabernet Sauvignon has many rich, seductive layers, all with tremendous concentration, and you are going to want to swim through each and every one. Suit up wine lovers; you do NOT want to miss this rich, red Californian. It has some great aging potential, so you might want to consider getting some for the cellar, for that 20th anniversary, or special occasion down the road... If you're drinking it now, our favorite choice for this velvety beauty is grilled lamb chops with garlic confit and mint. Next to them, nestle some eggplant involtini - thin slices of eggplant, wrapped around ricotta, egg and spices, which are then baked in a tomato sauce. This is a robust meal, which is the least that this Knights Valley knockout deserves. If you prefer a different meat, the juicy, dark fruit of this Beringer beauty warrants a special trip to the butcher for some thick, marbled steaks of your choice. Grill them the way you like, and serve them with a rich sauce like Béarnaise, next to potatoes your favorite way. They will bring out the fine tannins, and you won't believe your taste buds. If you have any room left, we suggest a slice of dense bittersweet chocolate tart sprinkled with toasted pine nuts. The savory alternative is not for the cheese faint of heart... We recommend a potent, aged Camembert to accompany another glass or two. Time to get out the big glasses winelovers!

Deep purple-black in color, it sings of crème de cassis, black cherries and black berry preserves with touches of camphor, dark chocolate and wood smoke. Full-bodied, firm and finely grained, the palate has loads of mineral accents with black fruit layers, finishing with a lively herbal lift. 7,664 cases produced, to be released in September 2019. The 2016 Sonoma harvest was early, with a mostly normal yield of exceptional quality fruit. A relatively even growing season followed welcome winter rains that helped to alleviate the drought. Temperatures cooled down in mid-September, providing a welcome break that allowed for extended flavor development. Overall, yields were down from the long-term average, but the reduction in size was offset by exemplary quality."
