Pour your first glasses and enjoy them with an earthy Fontina Val d'Aosta cheese. Or, you could share a wild mushroom white pizza drizzled with truffle oil. Roasted pigeon with pine nuts and raisins is a lovely entree option. If you've got some time on your hands, make it porcini risotto next to a pan-seared veal rib chop. It's a combination that you won't soon forget. 'Tis the season for wild boar ragu. Toss it with some of that fresh fettuccine you can make so well now that you've been practicing...
