P2 is Dom Perignon's higher end Champagne; a premium wine. The P2's have undergone much longer lees aging than their vintage equivalents, which results in additional freshness and complexity. P2 is shorthand for 'second plenitude', reflecting the house philosophy that Champagne experiences three different but equally wonderful stages in aging, captured in three different Dom Perignon releases: the 'regular' vintage wines, which have been aged on the lees for 7-8 years before disgorgement; the P2 wines which see 12-14 years on the lees; and finally the even rarer P3 wines, which undergo more than 20 years lees aging. Let's recap: this is a Champagne that Dom Perignon has designated premium. Less is made of it than their straight vintage Dom, so it's more rare. You won't find it on the shelf of your corner liquor store, or in too many other places either.

"A Champagne that has turned to a very fine texture with dried pineapple and lemon character. Medium to full body, complex and flavorful palate. Shows length and beauty. Pie crust, cooked apple and lemon rind continue on the finish. A truly great 2000 with a combination of finesse and strength. It’s very, very minerally to a point of sea salt. Antonio Galloni's Vinous: "Slate, crushed rocks, apricot jam, mint, honeysuckle and mint are some of the notes that run through the 2000 Dom Pérignon P2. Open-knit, racy and seductive, the 2000 is a rare P2 that will drink well right out of the gate. The reductive character from long aging on the lees that is such a P2 signature adds nuance without overpowering the wine. There is wonderful breadth and amplitude here. In sum, the 2000 presents a striking interplay of the maturity that develops over extended time on lees and freshness. The creamy, seamless finish only adds to the wine’s considerable immediacy and sheer appeal. Baked apple, toast, brioche, pear, smoke, slate and lemon confit add nuances throughout. "P2 is the Second Plenitude of Dom Perignon, the result of 16 years of elaboration. Both the complementary and contrasting elements that comprise the 'assemblage' resonate with each other for enhanced intensity, vibrancy and precision. The energy of the wine is at its peak.

On the nose: The bouquet is ripe, lively and generous. The warm aromas of hay and brioche mingle with those of bergamot orange and russet stone fruit. The overall effect exudes smoky grey accents. On the palate: The vibrant opening strikes the first chord, a prelude to a complexity that is more tactile than plump, and only gives of itself gradually. The distinguished viscosity is understated and simply fits around the contours of the wine. The length is exquisitely bitter and abounds with sap, a mingling of liquorice and toasted malt. Food pairing: Coherence is the key characteristic of P2 2000. To reveal it and to make the wine react through pairings, the provocation is the way with a strong beef stock or ravioli of whelks in parsley. It’s interesting to draw it out through small touches within rich, complete meals: fried artichokes, sea bass, peach salad and Kombu; grilled potato chips, milk foam and caviar. Piece by piece, a pointillist menu is assembled around the sensations of the Dom Pérignon P2 2000."
