: "The Lafarge family has resided in Volnay since the 18th century and was among the first Burgundian estates to begin bottling their own wines in the early 1900's. The generations make decisions together: Michel (one of Burgundy's elder statesmen), Frederic and his wife Chantal and (more recently) one of their daughters, Clothilde. There is no recipe except an acceptance of the vintage itself, and pressing is considered to be a key act. On visits to the Burgundy vinyards, some will spend time taking pictures of horses plowing the vineyards, but at Lafarge one photographs the chickens engaged in pest control in the Clôs du Château des Ducs. The domaine has always been organic, and for many years now, biodynamic (one of the leaders in Burgundy since 1997), with insistence on applying treatments with precision.
The wines range from an old vine Aligoté Doré and a remarkable co-planted Passetoutgrain to the celebrated Volnay ler Cru Clos des Chênes, a wine that is listed often as a 'desert island' choice. If the list of appellations seems rather long, it is important to notes that there is a wine for all seasons, all occasions and all purses; an illustration of the treasures of the Côte de Beaune.
