Guilhem Goisot is one of the rising stars of Burgundy. Along with his father, the highly-respected Jean-Hughes Goisot, Guilhem is crafting some of the best value wines coming out of Burgundy at the moment. With a heavy focus on biodynamic farming, these wines are some of the hottest property in French wine today. The critical acclaim for their wines is absolutely stellar. They are comfortably some of the best value you will find from the region. If you want high-quality white Burgundy that won't destroy your bank account, these wines are a must-try. It's rare to find Sauvignon Blanc in this part of the world, but this old vine offering from Guilhem is absolutely worth a look. Exogyra virgula is the name of the comma-shaped, limestone fossils (of ancient shellfish) that is so abundant in the soils of this part of the world. This biodynamic wine offers aromas of tart green apples, celery and lime. A pleasant palate leads to flavours of lime zest, pear and gooseberries with a short yet concentrated finish.
Antonio Galloni's Vinous: "The 2020 Saint-Bris Exogyra Virgula, which was taken from tank, has a light apple blossom bouquet with a lovely lemon thyme scent. The palate is fresh, vibrant and very saline, delivering good density and flavors of green apple mixed with pear toward the finish. Superb."
