A wonderful companion to one of our favorite comfort food meals, spaghetti and meatballs, is this Intrinsic Cabernet Sauvignon. It offers luscious, ripe fruit as well as a gentle earthiness, so it pairs beautifully with many meats and vegetables alike. Its well-integrated tannins make it particularly suited to grilled meats. Make a big platter of blue cheese sliders to wolf down with your first glasses; you won't regret it. Pan-seared pork chops slathered with sun-dried tomato pesto with a zucchini gratin on the side will bring groans of delight. For a more classic pairing, roast a leg of lamb with rosemary and garlic, surrounded by cippoline onions, carrots and baby potatoes. It's a one dish meal that's perfect for this Columbia Valley Cab. Fill your glasses one last time, and enjoy them with an aged, cloth-wrapped cheddar of your choice.
