We recommend kicking things off with a carne cruda, the Piedmontese style steak tartar. The fresh, delicate flavors of the dish will match beautifully with the elegance of the wine. Roast goose is a terrific choice for the entree, because the soft tannins of this Marziano Abbona are lovely with rich meats. Calves liver with onions and raisins may sound like an odd combination, but it marries perfectly with the earthiness of the wine as well as its fruit and floral side.
