From highly sought-after Peter Michael winery and French winemaker Nick Morlet, the Peter Michael 'Les Pavots'. Cabernet Blend It's big, bold, earthy and delicious, with lots of dark fruit and developed tannins. It is ready-ish to drink now or you can stash it away for 10 years or more. The question then becomes: are you the hedonistic type, or more of a self disciplinarian?

Jeb Dunnuck: "A solid step up, the 2016 Les Pavots comes from vines planted in 1989 and is a mix of two separate sites in Knights Valley. This straight-up phenomenal Cabernet offers a powerful nose of ripe black fruits, tobacco leaf, chocolate, and spring flowers, and it has a Margaux-like complexity and elegance. Full-bodied on the palate, it has a multi-dimensional, seamless texture, building tannins, and a great, great finish. It’s a baby of a wine that needs 4-5 years of bottle age, but it will probably merit a triple-digit score in 7-8 years and keep for three decades. Maturity: 2024-2054." Jun 2019
Robert Parker, Jr.'s Wine Advocate: "A blend of 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot and 7% Petit Verdot, the very deep purple-black colored 2016 Les Pavots Proprietary Red Wine sings of crushed blackcurrants, blueberry preserves and blackberry pie with hints of camphor, black soil, truffles, crushed rocks and red roses plus a touch of garrigue. Full, rich and with wonderful finesse in the mouth, it has very finely grained tannins and plenty of vivacity, finishing long and earthy. Drink date: 2020 - 2040." Oct 2018
Antonio Galloni's Vinous: "The 2016 Cabernet Sauvignon Les Pavots is a dense, powerful wine endowed with tons of raciness and class. Today, the 2016 is a bit shy, though. The aromatics are not as expressive as they can be. On the palate, the Pavots is much more giving. I sense a bit less heft than in the in recent past, which is not a bad thing at all. Time in the glass brings out attractive scents of grilled herbs, rose petal and mint to round things out. Drinking window: 2022-2036." May 2019
Winery: "Every one of our wines, regardless of varietal, is stamped with the image of a California poppy as an affectionate tribute to the orange flowers that covered the hillsides when Sir Peter first stood on this land. Many vineyards have roses planted at the end of the vineyard rows. We have wild poppies throughout. Les Pavots is our flagship blend, and the wine Sir Peter had in his mind’s eye when he started his search for a vineyard site in 1976. It is made from grapes grown in the vineyard of the same name on our home estate.
While the blend varies from vintage to vintage, it is typically two-thirds Cabernet Sauvignon, with the remainder roughly equal parts Cabernet Franc and Merlot, and a final soupçon of Petit Verdot. We enjoy this refined Cabernet blend with its signature blueberry notes, hint of herbs de Provence and its wonderful expression of the full spectrum of red Bordeaux varietals."
