Hearty meat dishes will pair best with this Raymond Generations Napa Valley Cabernet Sauvignon. Beef, lamb, steak and game are just the ticket. The pairings options are endless given the myriad of flavors in this remarkable Raymond. Rich, ripe fruit, baking spices and star anise, vanilla, cocoa and more. If you decide against stowing it in your cellar, we suggest grilling a rack of lamb which has been drizzled with olive oil and sea salt. Next to that, some rice tossed with lentils and torn fresh mint leaves, and eggplant your favorite way. It will awaken the gentle spices in this Napa Cab. Or, we love a thick New York strip too. Mix some coarsely cracked black pepper with sea salt and press it onto both sides of the steak and grill to perfection. When you make the creamy mashed potatoes to go with it, heat the milk or cream with a sprig or two of fresh rosemary in the pan; it will result in the most wonderfully subtle flavoring. Hang on; we're not done yet. Make sure you get enough of this Generations so that there will be at least one glass to go with the dark chocolate mousse for dessert. Winery: "Dark ruby in the glass, our 2015 Generations Cabernet Sauvignon opens with alluring aromas of concentrated blackberry with brambly and mineral notes. This big and full, velvety, wine offers a lot of density with a very brooding finish. Flavors of cassis are accented by touch of black licorice with a beautifully long finish on the palate. Well balanced with a full-bodied mouthfeel and intense flavors, enjoy this wine now or allow it to age for the next 25-30 years."

The 2015 Vintage: "The unseasonably warm temperatures in the early growing season in the Napa Valley in 2015 resulted in early bud break and bloom. Colder temperatures later in the season caused uneven fruit set and resulted in a smaller crop than previous average yields. Winemakers and vineyard crews worked diligently to pick and sort the best berries. Harvest began as early as July 22nd, one of the earliest harvests recorded and concluded by mid-October. While drought was still a concern for most of California, Napa Valley received 75% of normal rainfall for the water year."
