That you will love it is a given. The big question is can you wait a while? It's drinkable now, young and vibrant, but will only get smoother and more complex with time. We say muster all your available self control and place this Robert Foley Vineyards Claret on the display shelf reserved for your treasures, and busy yourself with something else. To fully enjoy the flavors of this "brilliant winemaking", we suggest decanting it an hour before drinking. Fill your glasses and pass a platter of grilled pizza bites of hot Italian sausage, Pecorino and fresh Campari tomatoes. Be sure there is enough seating for everyone, because this combination could cause weakness in the knees. Meaty, flavorful fare is best for the entree as you move to the next phase of enjoyment. We can't think of a better companion than spring lamb. Grill some racks of lamb and then top them with a spoonful each of fresh basil pesto and black olive tapenade. The savory nature of this dish will delight opposite the rich fruit, and embrace the fully body of the wine like a long lost friend. Place some small shallots in the cavity of a well-seasoned capon and roast until crisp. Top each serving with grilled figs and an herbed port sauce for a terrific alternative to the lamb. If you're feeling classic, get some big, thumping porterhouse steaks and grill them. Serve alongside creamed spinach and perfectly oven-roasted potatoes and that ought to bring the house down.
