We give this Roederer Estate Brut a D, for De-lish. (Yup, same owners as the proprietors of Champagne Louis Roederer, maker of Cristal.) The best news? You can load up for the season on this spectacular sparkler and let the fun begin without worrying about it breaking the bank. You'll know the party's started when your hear the pop, and the homemade, perfectly salty potato chips and wasabi devilled eggs are standing by. Where to go from there? We think a creamy lobster risotto will be lovely with the fine Brut bubbles. Sauteed sea bass with chive puree and roasted haricots and carrots are another great pairing option. And lest you forget that bubbles are just for dinner, they are a favorite companion to egg and brunch dishes. We're envisioning poached eggs with buttery
mouillettes (toast fingers), half of which are wrapped with smoked salmon, and that other half of which are sprinkled with Parmigiano-Reggiano, and then baked just until they're melty. But will there be room for pear tarte tatin after that??
