    We're not sure what we like better about this Alpha Crucis Titan Cabernet Sauvignon, the delicious earthiness, or the red and blue fruit mixed with spices. Whichever you choose to focus on, decant your bottle at least an hour before drinking. Then, whip up some blue cheese sliders to go with your first glasses. They'll bring out another of our favorite things about this wine: it's meaty tannins. After that, bring out the beautiful fruit of this Titan with roasted rack of lamb and a tomato-balsamic chutney. Pan-seared filet mignon with a Gorgonzola sauce is another great choice. If you've got some time on your hands, make it a Greek Moussaka, eggplant slices alternating with ground beef and spices like cinnamon and nutmeg, topped with a browned Bechamel sauce. Heavenly with this McLaren Vale Cab. Our advice: release this Titan!

    Winery:  "Deep purple with crimson hues. Aromas of lifted dark cherry and plum fruits, layers of chocolate, spice and nuts. Dark cherry, saturated plums, layers of spice and dark chocolate combine on the palate. Dense and concentrated but well balanced, with a long fine finish. Decant on opening in the first 5 years. Will reward cellaring for 6-8 years or more."

    Pair with game, lamb, mild red meat, or stews.  Meat stocks, mustard, or pepper.  Camembert, Cheddar, Colby, Danish Blue, Gorgonzola, Gouda, Parmesan, Blue Cheese, or Roquefort.
