The 2002 Vin Santo di Montepulciano undergoes such a long aging regime in tiny oak vessels, everything must line up perfectly if the wine is to show this level of quality and perfection. Any minimal spoilage or oxidation in any single barrel could mean destruction. I tasted this sample in a precious 100 milliliter bottle.     Mediterranean herbs. Notes of freesia, candied orange peel and French pastry develop as the wine opens. On the palate, this
    sweet wine reveals new and surprising flavors with every sip; fig, almond, lemon, and roasted coffee bean. A perfect balance
    between the acidity and sweetness compliments a sensual finish.  

    Crafted from only the best Trebbiano and Malvasia grapes from our vineyards and dried for several months on reed mats
    in the appassitoio, the Vin Santo ages for a decade and owes much of its special character to the madre, a century-old yeast,
    which is carefully protected by Avignonesi."
