Pingus calls this winery every year looking to buy fruit because of the location, oenology, organic farming and biodynamic preparations. And, it's scored between 94-96 points from Wine Spectator for the last 5 vintages. How do you like them apples?
We're into this Valderiz Ribera del Duero because it's so rich with fruit and beautifully concentrated. Translation: very food friendly stuff. Start off with a salad of baby arugula, sliced d'Anjou pear, Manchego cheese and a garlicky vinaigrette. For added oomph, top with shaved Serrano ham; its salt will be exquisite opposite all of that delicious fruit. The winery recommends grilling lamb chops over vine cuttings. Sounds good to us, but if you don't happen to have any vine cuttings, we're perfectly happy with this Valderiz and grilled lamb chops after they've been rubbed with EVOO, crushed garlic and red pepper flakes. The wine also goes beautifully with grilled vegetables. Classic onions and peppers, or brocolli, cauliflower, yams and grape tomatoes tossed with EVOO, salt and Vaudovan curry powder and then roasted in the oven. You won't need the lamb chops! Not a meateater? Not to worry; this Valderiz works very nicely with grilled salmon. Put that next to the roasted Vaudovan veggies and you're all set. Any questions?

The total absence of herbicides, pesticides and fertilizers is the vinyard´s distinctive trademark. This practice has led to some forward-thinking to develop biodynamic viticulture and since 2000, a small area of land has been cultivated using biodynamic practices. The “Pago de Valdehermoso” is a vineyard situated in Roa where some of the most complex Tinta del Pais grapes in the Ribera del Duero region are produced, as certified by D.O. enologists benchmark analysis."
