As for the entree, the spice and dark fruit, ripe tannins, earthy nuances and strong presence of this Felino make it a natural with beef, lamb and game, especially if they're done on the grill. The tannins will score a 10 each time when paired with your favorite steak grilled to perfection. A little more effort will have a crowd oohing and ahhing if you prepare a rub of lavender buds, fennel seeds, black and white peppercorns and dried thyme, and use it on a whole beef tenderloin oven-roasted to medium rare doneness.
